Instructions
  1. Cook chicken breasts or thighs (see above). In a Dutch oven or large pot, sautee onions and garlic in olive oil for 3-5 minutes. Add zucchini and squash and sautee for 10-15 more minutes until tender. Add the rest of the ingredients and bring to a boil. Turn to low heat and simmer for 30 or more minutes. Add the cooked shredded chicken when it is done cooking. Add toppings.
