Pumpkin Recipes for the Fall

1. Pumpkin Cookies with brown butter Icing

pumpkin recipes

For the Cookies:

  • 1/2 cup softened unsalted butter
  • 3/4 cup granulated white sugar
  • 3/4 cup brown sugar, packed
  • 1 cup canned pumpkin puree
  • 1 egg
  • 1 tsp vanilla
  • 2 1/2 Cups Flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 tsp pumpkin pie spice

For the Brown Butter Icing:

  • 3 cups powdered sugar
  • 1/2 cup unsalted butter
  • 1/4 cup heavy cream
  • 2 tsp vanilla

For the cookies:

  1. In a stand mixer or large bowl cream the butter and both kinds of sugar together until smooth
  2. Add in pumpkin puree, egg, vanilla, and mix until well combined
  3. Slowly mix in each of the dry ingredients one at a time.  (When adding flour, mix in 1/2 cup at a time.)
  4. Scrape the bottom and sides of the bowl/mixer to make sure all of the dry ingredients are well combined.
  5. Cover the bowl in plastic wrap and chill for up to 1 hour.
  6. Drop large balls of dough onto a parchment paper covered cookie sheet and press down the dough in the middle with a spoon.
  7. Bake for 10-12 minutes or until bottoms and edges appear golden brown.
  8. Cool completely before adding icing.

For the Brown Butter Icing:

  1. Melt butter in a saucepan over medium heat whisking constantly.  The butter will begin to foam.  Watch it carefully as it turns a golden brown.  The butter will begin to smell “nutty”.  This is your cue to pull it from the heat.  Do not overcook, as it will burn.
  2. Let the butter cool for a few minutes and pour the powdered sugar into a large bowl.
  3. Once the butter has slightly cooled, pour it, along with the remaining ingredients into the powdered sugar.
  4. Whisk until the icing is smooth but not stiff.  If you need to add an extra TBS of Heavy cream to thicken it slightly, you may.
  5. Ice cookies and enjoy
