5 Must-Try Pumpkin Recipes for Fall

Just call me basic. As soon as there’s the slightest chill in the air, (cough **below 90 degrees** cough) I’m pulling on my Uggs and stocking up on pumpkin puree for my favorite pumpkin recipes.

One of my favorite things about fall is all things pumpkin spice. Pair that with my love of baking and I am in fall heaven. Here are 5 of my favorite pumpkin recipes, including one for those non-pumpkin lovers… I may not understand your ways, but I’ve still got your back!

Pumpkin Recipes for the Fall

1. Pumpkin Cookies with Brown Butter Icing

Ingredients:

For the Cookies:

  • 1/2 cup softened unsalted butter
  • 3/4 cup granulated white sugar
  • 3/4 cup brown sugar, packed
  • 1 cup canned pumpkin puree
  • 1 egg
  • 1 tsp vanilla
  • 2 1/2 Cups Flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 tsp pumpkin pie spice

For the Brown Butter Icing:

  • 3 cups powdered sugar
  • 1/2 cup unsalted butter
  • 1/4 cup heavy cream
  • 2 tsp vanilla

Steps:

For the Cookies:

  1. In a stand mixer or large bowl, cream the butter and both kinds of sugar together until smooth.
  2. Add in pumpkin puree, egg, vanilla, and mix until well combined.
  3. Slowly mix in each of the dry ingredients one at a time. (When adding flour, mix in 1/2 cup at a time.)
  4. Scrape the bottom and sides of the bowl/mixer to make sure all of the dry ingredients are well combined.
  5. Cover the bowl in plastic wrap and chill for up to 1 hour.
  6. Drop large balls of dough onto a parchment paper covered cookie sheet and press down the dough in the middle with a spoon.
  7. Bake for 10-12 minutes or until bottoms and edges appear golden brown.
  8. Cool completely before adding icing.

For the Brown Butter Icing:

  1. Melt butter in a saucepan over medium heat whisking constantly. The butter will begin to foam. Watch it carefully as it turns a golden brown. The butter will begin to smell “nutty.” This is your cue to pull it from the heat. Do not overcook, as it will burn.
  2. Let the butter cool for a few minutes, and pour the powdered sugar into a large bowl.
  3. Once the butter has slightly cooled, pour it—along with the remaining ingredients—into the powdered sugar.
  4. Whisk until the icing is smooth but not stiff.  If you need to add an extra TBSP of heavy cream to thicken it slightly, you can.
  5. Ice cookies and enjoy.

2. Pumpkin Chocolate Chip Cookies

3. Pumpkin Bread

Ingredients:

  • 1 1/2 cups flour
  • 1 cup granulated white sugar
  • 3/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 tsp cardamom
  • 1/2 tsp cinnamon
  • 1/4 tsp allspice
  • 1/4 tsp clove
  • 1/2 tsp pumpkin pie spice
  • 2 eggs
  • 1 cup pumpkin puree
  • 1/2 tsp vanilla
  • 1/2 cup vegetable oil

Steps:

  1. Preheat oven to 350 degrees.
  2. In a stand mixer or large bowl, mix all dry ingredients.
  3. One at a time, carefully add in the wet ingredients, stirring/beating only to combine each one and make sure no lumps remain.
  4. Once all of the ingredients are combined (and not overly mixed) pour into a greased bread pan.
  5. Bake for 45 minutes or until the middle is done when a toothpick is inserted.
  6. Let bread completely cool. You can eat it alone, or top it with the Brown Butter Icing recipe above or Cream Cheese Frosting recipe below.

Cream Cheese Frosting

Ingredients:

  • 1/4 cup unsalted butter, softened
  • 4 oz of cream cheese, softened
  • 1 tsp vanilla
  • dash of salt
  • 2 cups powdered sugar

Steps:

  1. Cream the butter and cream cheese together.
  2. Add in vanilla and salt.
  3. Slowly add in the powdered sugar until frosting is smooth and creamy.

4. Pumpkin Bread Pudding

Ingredients:

  • 4 cups of bread torn into small chunks (use any kind of bread for this)
  • 1 cup half and half
  • 1 cup pumpkin puree
  • 2 eggs
  • 1 tsp vanilla
  • 1/3 cup granulated white sugar
  • 1/2 cup packed brown sugar
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • Caramel sauce and whipped cream for topping (My favorite recipes below)

Steps:

  1. Preheat oven to 350 degrees.
  2. Grease 8×8 baking dish and add the bread to the bottom of the pan.
  3. Whisk wet ingredients together in a bowl.
  4. Add in seasonings whisking until smooth.
  5. Pour onto bread.
  6. Bake for 40 minutes (or until golden and set). Serve warm with caramel sauce and whipped cream! Here are my favorite recipes for those below:

Caramel Sauce

Ingredients:

  • 1/4 cup unsalted butter
  • 1/2 packed brown sugar
  • 1/4 heavy cream

Steps:

  1. Melt butter in a small saucepan over medium heat.
  2. Stir in brown sugar, whisking constantly until dissolved.
  3. Pour in cream, whisking constantly until thick and smooth.

Cinnamon Whipped Cream

Ingredients:

  • 1 cup of heavy cream
  • 2 TBSP powdered sugar
  • 1 tsp vanilla
  • 1 tsp cinnamon

Steps

  1. Pour all ingredients (except cinnamon) in a stand mixer or large bowl.
  2. Whisk (or mix) constantly until stiff peaks form.
  3. Fold in cinnamon.
